  • 1/2 green bell pepper (diced)
  • 2 tablespoons honey
  • 1 tablespoon thai sweet chili
  • 1 teaspoon brown sugar
  • 1 tablespoon vegetable oil
  • 1 pound medium sized shrimp (tails on & deveined)
  • 1 tablespoon dry jerk seasoning
  • 1 teaspoon soy sauce

Jerk Sauce Blend

  • 1 tomato
  • 4 stalks of thyme
  • 1 scotch bonnet (seeds removed)
  • 1/2 lemon (juiced)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon dry jerk seasoning
  • 1 tablespoon jerk sauce paste (mild)

Season shrimp with 1 tablespoon of dry jerk seasoning and 1 teaspoon of salt. Set aside.

Heat up vegetable oil over medium heat in large skillet

Blend dry jerk seasoning, honey, tomato, thyme, scotch bonnet, lemon, jerk paste, and soy sauce. Set aside.

Add diced green onion and bell peppers to skillet

Sauté for 3-5 minutes

Mix in jerk blend, and bring to a boil

While boiling, mix in added soy sauce, thai chili sauce, brown sugar, and honey

Reduce heat to a simmer and allow to cook for 10-15 minutes (the sauce should thicken)

Bring heat back to medium heat and stir in shrimp. Allow to cook for 3-5 minutes (until shrimp becomes pink. You do not want to overcook)

Serve and enjoy!
