Jamaican Jerk Chicken Wings

  • 5 cup soy sauce
  • 2 tbsp avocado oil + extra if needed
  • 1 tbsp kosher salt
  • 1 teaspoon allspice
  • 1 teaspoon dried thyme
  • 2 bunches green onions, chopped
  • 3 cloves garlic, crushed
  • 2 Scotch bonnet chiles, roughly chopped, with seeds
  • 1 tablespoon fresh ginger
  • 1 medium white onion, chopped
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Paprika
  • 1 tablespoon Browning sauce
  • 1 oz Lime Juice
  • 2 oz Orange Juice
  • 3 lbs chicken wings


In a food processor, blend all of your herbs and spices. If you don’t have a food processor, you can also pulse the marinade in a blender. Set aside.

Preheat your grill.

Clean your chicken.

Add chicken to your herbs and spices, ensuring that you coat each piece with marinade.

Let the chicken marinate for at least one hour (but the longer the better).

Dump out reserved marinade liquid.

Place wings on the grill and cook until wings come to 165 degrees Fahrenheit.
