A quick summer classic for weeknights or weekends. Simply grill and toss with your favorite seasonings and you've got a nutritious side dish that takes no time at all. Plus, this is a great base for any additional toppings like feta & mint, lamb & figs, and fish & lemon.

  • Extra Virgin Olive Oil
  • Salt & Pepper

Recipe

While the grill is heating up, wash and halve the squashes.

Throw squashes on the grill and cook on each side until tender. 

Remove squashes from grill and toss with olive oil, salt, and pepper in a bowl. 

Add in any additional ingredients, toss, and serve!
